I am trying to watch a Counter-Strike 2 demo from IEM Cologne last week, but when I try to open the demo I get an error saying the demo file is incompatible with the game version. Is there a way to run a previous version of the game, and would the demo work in that case?

    You can start the legacy CSGO client using the steam beta options menu, that might work for your demo.

To fix it for this particular patch. In Steam, go to properties -> Betas -> 1.40.8.8 - 1.40.8.8. Then update your game and proceed as normal.
